By now you may have heard all the buzz about Lion's Mane mushrooms, Hericium erinaceus, and how ➡️ they can help your brain ⬅️ - BUT, you gotta eat them first! Here you'll find a simple recipe, easy to whip up as breakfast, lunch, or dinner! (Psst: for the breakfast version just add 2 eggs!)

What You'll Need:
Lion's Mane Mushroom
Wraps (we used the spinach & herb wraps)
Soy Chorizo
Shredded Sharp Cheddar Cheese
1 Green Pepper - diced
1 Onion - diced
1 Clove of Garlic - minced
1 tbsp Butter
1 tsp Salt (we love Peg's Salt)
Cayenne Pepper
Red Pepper Flakes
Chipotle Aioli or Sriracha-Mayo
Step-By-Step Instructions:
First preheat the oven to 350 - we will briefly bake the wraps after assembled
Next, in a medium sauce pan, start by sautéing your lion's mane mushroom in butter and minced garlic on a low heat for about 5 minutes, stirring frequently
Once the Lion's mane has started to brown, add in the soy chorizo, diced onion + diced green pepper and turn the heat up to medium
While stirring add a dash of cayenne, red pepper flakes, salt and finally a splash of water for the chorizo and continue to mix it all together
Once thoroughly mixed prep your wraps with your aioli/sauce then load 'em up with the good stuff! Don't forget to add your shredded cheese to the mix before swaddling those sweet babies 👶 😋
Once wrapped, place them in the oven for about 5 minutes ⏰
Carefully take your wraps out of the oven (don't forget to turn that oven off!) slice diagonally, and enjoy!
